Chocolate Chip Coconut Pie

There is still snow on the ground in some spots here in Nashville, and we are supposed to get some more snow on Wednesday.  When it's cold and snowy, I always want a warm dessert and some hot coffee.  Snow makes me think of coconut, so here's a warm gooey coconutty pie just in time for more snow.

 

Chocolate Chip Coconut Pie

1 unbaked pie crust

1/4 cup butter, melted

1/2 cup sugar

1/2 cup brown sugar

2 eggs

1 tsp vanilla

1/2 cup flour

1/8 tsp salt

1 cup semisweet chocolate chips

1 cup coconut

Preheat oven to 325 degrees. Place unbaked pie crust in pie plate.

In a large bowl, whisk butter, sugar, and brown sugar.  Add eggs, one at a time, and whisk well.  Add vanilla.  Stir in flour and salt.  Fold in chocolate chips and coconut.  Pour into pie crust.  Bake for 45 minutes or until center is set.  Serve warm.
