Rainy Day Brownies

…yeah, I totally made that name up just now.  It has been raining a lot lately, and when it rains, why not make brownies?  These are super fudgey and super fattening, but who cares? It's raining and you're not going anywhere.  Put your pj's on and enjoy!

Rainy Day Brownies

1 (4oz.) tub mini OREO cookies

4 T. butter

1 box brownie mix (plus ingredients to make brownies – I like to use Betty Crocker with Hershey's syrup )

1 (8oz) bar cream cheese, softened

1/4 cup powdered sugar

1 egg

Preheat oven to 350º.  In food processor, grind cookies and butter until coarse crumbs form.  Press crumb mixture into bottom of 9×9-inch square pan (I like to use my Pampered Chef Square Baker).

Mix brownie mix according to package directions.  Pour half the batter over the crumb mixture. Set other half aside.

In a large bowl, combine cream cheese, powdered sugar, and egg.  Beat with electric mixture until smooth. Pour cream cheese mixture evenly over brownie batter.  Spread remaining brownie batter over cream cheese mixture.

Bake for 40 minutes or until toothpick inserted in center comes out clean.
