I'm not a big fan of pumpkin, but Pinterest is ablaze with pumpkin recipes right now. Totally against my will, I'm conforming to the in-crowd and sharing a pumpkin recipe with you. My 10-month-old devoured a whole muffin all by herself, so clearly, she can't be my child. She's just so darn cute that I'll keep her.

Recipe: Pumpkin Muffins
Ingredients
- 3 eggs
- 8 oz canned pumpkin
- 1/3 cup applesauce
- 1 cup sugar
- 2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 3/4 cup semi-sweet or dark chocolate chips
Instructions
- Preheat oven to 400 degrees. Line muffin pan with paper liners and spray each liner with cooking spray. (makes 12 muffins)
- In a large mixing bowl, combine eggs, pumpkin, applesauce, and sugar. Mix well.
- Add in flour, baking powder, baking soda, cinnamon, and salt until well combined.
- Fold in chocolate chips.
- Pour batter into 12 muffin cups.
- Bake in pre-heated oven for 20-25 minutes or until cake tester inserted in center comes out clean.
- Cool on wire racks before serving.
