Have you ever had one of those off days? You know, the kind of day where everything is just off….
Like……
* when your mom is in town to visit and she’s sleeping on the couch in the living room. The next morning, you get ready to leave the house and can’t find your car keys anywhere. You open the front door, and there they sit in the keyhole. You know, any burglar or serial killer could have easily turned the lock and came in to find your poor unsuspecting mother on the couch snoring away!Â
* when you pull to the drive-thru at Schlotzsky’s with your poor almost-got-murdered-in-the-night-because-you-left-the-keys-in-the-door mother to place your lunch order, and your tongue gets twisted. The order taker asks what kind of chips you’d like and you ask if he has cracked pecker (aka cracked PEPPER) chips. Then you realize what you just said and can’t stop laughing to tell the poor guy, whose manhood you just questioned, what you actually want to order. Then, you are too scared to pull up to the window because you aren’t sure that you can maintain your composure to face the guy (and the rest of the employees trying to get a look at the crazy woman).
Those are, of course, just examples of an off day, but if I did have one of those days, I would rush home and make these (and I did). They also make great Christmas gifts.
Adapted from Cookie Dough Truffles
Ingredients
- ½ cup (1 stick) unsalted butter, room temp
- ¾ cup light brown sugar, packed
- 2-1/4 cups all-purpose flour
- 1 (14 oz.) can sweetened condensed milk
- 1 teaspoon vanilla extract
- ½ cup mini semisweet chocolate chips
- 1 tub mini Oreos
- 1-1/2 lb. semisweet chocolate chips
Instructions
- Cream the butter and sugar on medium-high speed until light and fluffy, about 2 minutes.
- Beat in the flour, sweetened condensed milk, and vanilla until well combined.
- Stir in mini chocolate chips.
- Cover with plastic wrap and refrigerate until the mixture is firm enough to form balls.
- Wrap the chilled cookie dough mixture around each mini Oreo and shape into balls.
- Place on a wax paper-lined baking sheet and freeze for 1 hour.
- Melt the semisweet chocolate chips in a microwave-safe bowl at 50% power, stirring frequently, until melted and smooth.
- Dip each truffle in chocolate and place on wax-paper lined baking sheet.
- Chill 30 minutes before serving to ensure chocolate has set.
- Store in the refrigerator.
