{Christmas Gifts} Vanilla Hot Chocolate Mix

First off, I would like to start by saying a big thank you to Melissa for providing the opportunity to guest post on her lovely blog! My name is Meg and I started my blog a little over 6 months ago with the intention of posting about once a week but it quickly turned into an obsession. I have always loved cooking and baking but my blog has forced me to experiment and go out of my comfort zone which in turn has made my love grow even stronger.  I am a stay-at-home mom to a wonderful 15 month old son, Noah, and wife to an amazing husband, Joel.

I am not a coffee drinker so hot chocolate is definitely my go-to hot drink in the many (seriously, like 5) freezing months of a Minnesota winter. While the packets of hot chocolate are okay, there is nothing like a mix made from scratch.

I searched all over the internet for a unique recipe and I found it in this Vanilla Hot Chocolate Mix from Epicurious. I absolutely love vanilla bean so from the second I saw this recipe I knew it was mine for the making. This is so incredibly chocolatey, creamy and delicious. It would be to die for with a dollop of fresh whipped cream on top! And it makes up to 32 servings so it just might last me through the harsh winter that is about to strike.

Vanilla Hot Chocolate

This would be the perfect gift for neighbors or hot chocolate loving friends and family. One recipe fills up several mason jars. Top them with a cute little label on top and tie a ribbon around the jar with serving instructions. You could also make a little basket that included a couple cute mugs, homemade marshmallows, peppermint stick to use as stirrers and of course a big jar of hot chocolate deliciousness. {Christmas Gifts} Vanilla Hot Chocolate Mix

Ingredients

  • 4 cups granulated sugar
  • 1/2 vanilla bean, split crosswise
  • 1-1/2 pounds high-quality semisweet chocolate, coarsely chopped
  • 8 ounces milk chocolate, coarsely chopped
  • 2 cups unsweetened cocoa powder, preferably Dutch process

Instructions

  1. Place sugar in large bowl. Split half vanilla bean lengthwise, scrape seeds into sugar, and add pod. Work seeds in with your fingers. Cover snugly with plastic wrap and let stand overnight at room temperature.
  2. In food processor fitted with metal blade, process semisweet chocolate and milk chocolate until finely ground, using 4-second pulses. (Process in two batches if necessary.)
  3. Remove pod from sugar. Add ground chocolate and cocoa powder to sugar and whisk to blend.
  4. Store mix airtight at room temperature for up to six months.
  5. To serve:
  6. For each serving, heat 8 ounces milk in small saucepan over medium heat until scalded (or microwave 2 1/2 minutes at full power). Whisk in 1/4 to 1/3 cup mix. Serve with unsweetened softly whipped cream or marshmallows.

    Ohhh I’ve always wanted to make my own hot chocolate but I’ve never found a recipe that appealed to me. This sounds delicious!
