S’mores Cake

Doesn’t this look divine?

Well, I may have intended this to be a completely different dessert. This was supposed to be Mississippi Mud Cake which didn’t turn out so well, so I improvised.  I got all creative and stuff.  You know what…It totally worked out for the best. This WAS divine!

I may have even licked the plate when no one was looking…that’s our little secret, right?

Ingredients

    Chocolate Cake:
  • 1 cup butter, melted
  • 2 cups sugar
  • 1/2 cup Dutch process cocoa powder
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1-1/2 cups flour
  • 1 (7oz) jar marshmallow creme
  • 1 cup graham cracker crumbs
  • Icing:
  • 1/2 cup butter, melted
  • 4 tablespoons Dutch process cocoa
  • 1 teaspoon vanilla extract
  • 2-1/2 cups powdered sugar
  • 3 tablespoons milk

Instructions

    Chocolate Cake:
  1. Preheat oven to 350 degrees. Grease 9x13-inch pan.
  2. In bowl of stand mixer, cream together 1 cup melted butter and 2 cups sugar.
  3. Add 1/2 cup cocoa.
  4. Add eggs one at a time until well combined.
  5. Mix in vanilla, salt, and flour until batter is smooth but thick.
  6. Pour batter into prepared pan.
  7. Bake for 25 minutes or until cake tester inserted in center comes out clean.
  8. Immediately after removing from oven, spread marshmallow creme evenly over cake.
  9. Sprinkle graham cracker crumbs over marshmallow layer.
  10. Drizzle icing over top of graham cracker crumbs.
  11. Cool completely before slicing.
  12. Icing:
  13. In a large bowl, mix together melted 1/2 cup butter and 4 tablespoons cocoa.
  14. Add vanilla.
  15. Slowly add powdered sugar until combined.
  16. Add milk to desired drizzling consistency.
  17. Drizzle over cake.
