Strawberry Cake Mix Cookies

Do you read gossip magazines? You know the “Woman Gives Birth to Alien Baby while Knitting a Scarf” kinda magazines.

I don’t normally, but I was grocery shopping when it happened.

A woman (we’ll call her “Crazy Lady“) was in line in front of me causing a scene over some raincheck that the cashier was not honoring while I had an overly cranky toddler in line with me crying for a nap. Instead of watching the raincheck drama unfold, I perused the gossip magazines. To my surprise, I found an article about Leonardo DiCaprio getting married (again, I was reading a gossip mag).

NO! He just can’t get married. He’s only been my imaginary boyfriend since I was like 12. I mean, DUH!

I may have said that out loud, and Crazy Lady and Cashier Lady turned to look at me like I WAS the crazy one. I just smiled and went back to my magazine.

The nerve…..

Since we are gossiping, I hear that these are Leo’s FAVORITE cookies!

Strawberry Cake Mix Cookies

Yield: 2 dozen medium cookies

Strawberry Cake Mix Cookies

Ingredients

  • 1 box strawberry cake mix
  • 1/2 cup butter, softened
  • 2 eggs
  • 2 tablespoons vegetable oil
  • semisweet chocolate chips, melted (for drizzling)

Instructions

  1. Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  2. In a mixing bowl, beat cake mix, butter, eggs, and oil until smooth and well blended.
  3. Drop by rounded tablespoonfuls (I use a medium cookie scoop.) onto parchment lined baking sheets.
  4. Bake for 12-15 minutes or until cookies start to crackle.
  5. Remove from oven and cool on wire racks.
  6. Drizzle melted chocolate chips over each cookie.
