Ingredients
- 1 box cake mix, plus ingredients on box
- 1 jar Strawberry Marshmallow Fluff
- 1 (8oz) bar cream cheese
- 1/2 cup butter, softened
- 4 cups powdered sugar
- 1 tablespoon Wilton Meringue Powder
- 1 teaspoon vanilla or almond extract
- 2 tablespoons water
Instructions
- Preheat oven to 350 degrees. Line muffin tins with paper liners.
- Prepare and bake cupcakes according to package directions.
- Cool on wire racks.
- With a sharp knife, scoop out center of cupcakes.
- Fill each cupcake with Strawberry Fluff.
- In a large mixing bowl, beat cream cheese and butter until smooth and fluffy.
- Add powdered sugar and Meringue Powder until well combined.
- Add vanilla. Add water to desired consistency.
- Spread icing over cupcakes.
- Top with a strawberry.
