Did y’all know that tomorrow is National Pound Cake Day?

Pound cake always reminds me of my sweet little Maw Maw. Pound cake was one of her favorites, especially when it was hot out of the oven. We’ve always baked pound cake in the LONG Wilton Loaf Pan. It makes THE BEST pound cakes, and the ends are always crispy. We all wanted the end pieces! I have so many great memories of Sunday dinners at her house, and pound cake was one of the staples. I miss my little Maw Maw *tears*.

Marble Pound Cake

Marble Pound Cake

Ingredients

  • 1 (8-oz) bar cream cheese, room temperature
  • 3 sticks of butter, softened
  • 3 cups sugar
  • 6 eggs
  • 1 teaspoon vanilla
  • 3 cups flour
  • 4 tablespoons Dutch-process cocoa

Instructions

  1. Preheat oven to 325 degrees. Grease a long loaf pan or tube pan.
  2. In the bowl of a stand mixer, mix together cream cheese and butter until smooth.
  3. Add sugar to butter mixture and cream until light and fluffy.
  4. Add eggs, two-at-a-time, and vanilla. Mix well.
  5. Mix in flour until well combined.
  6. Pour 3/4 of the batter into loaf pan.
  7. Add cocoa to the remaining 1/4 of batter and mix well.
  8. Dollop the chocolate batter on top of the plain batter.
  9. With a knife swirl batter to form a marble look.
  10. Bake for 1 hour and 15 minutes or until cake tester inserted near center comes out clean.
  11. Cool on wire rack before turning out onto serving platter.
