Glazed Lemon Poppy Seed Cookies

Finally! I’m done with ALL our business and personal taxes, and there’s even a few days to spare. I hate tax season! Now it’s time for baking again! YIPPEEE!!!

These glazed lemon cookies are sure to please your lemon cravings!

Glazed Lemon Poppy Seed Cookies

Yield: approx. 18 cookies

Glazed Lemon Poppy Seed Cookies

Ingredients

    For Cake:
  • I box lemon cake mix (I used Duncan Hines Lemon Supreme)
  • 1/3 cup oil
  • 2 eggs
  • 1 tablespoon poppy seeds
  • For Glaze:
  • 1-1/2 cups powdered sugar
  • 3 tablespoons lemon juice
  • lemon zest, for garnish

Instructions

    For Cake:
  1. Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  2. In the bowl of an electric mixer, mix together cake mix, oil, and eggs until well combined.
  3. Stir in poppy seeds.
  4. Drop cookie dough by rounded tablespoonfuls onto prepared baking sheets. (I use my medium cookie scoop.)
  5. Bake for 12-14 minutes or until golden.
  6. Remove from oven and glaze cookies while they are still warm.
  7. Cool on wire racks for an hour or until glaze has hardened.
  8. For Glaze:
  9. In a medium bowl, whisk together powdered sugar and lemon juice until smooth.
  10. Spread about a teaspoon on each cookie.
  11. Garnish with lemon zest.
