Blueberry Cobbler

This week has been a little crazy, and I’m glad for a little relaxation this weekend. How about y’all?

Amidst all the craziness, I stopped at the grocery to pickup a few things and noticed gorgeous blueberries on sale. I’m not into eating them by themselves but when baked into some sweet concoction, I LOVE ‘em! And when you top that sweet concoction with ice cream, it’s sweet gooey blueberry heaven!

Today’s blueberry heaven…Blueberry Cobbler…

This is a new recipe that I tried, and I think the nutmeg takes it over the top! A warm, gooey, sweet blueberry bottom with a crunchy, cinnamon/sugar topping and melty ice cream on top, I think this is the definition of sweet comfort food.

Blueberry Cobbler

Ingredients

    For Blueberry Layer:
  • 2 pints fresh blueberries
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 2 teaspoons cornstarch
  • For Topping:
  • 1 cup all-purpose flour
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, chilled and cut into small pieces
  • 1/4 cup boiling water
  • cinnamon/sugar, for sprinkling

Instructions

  1. Preheat oven to 425 degrees. Grease a 2-quart casserole dish.
  2. For Blueberry Layer:
  3. In a large bowl, combine blueberries, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, and cornstarch. Toss to coat evenly. Pour into pan.
  4. Bake in preheated oven for 10 minutes.
  5. For Topping:
  6. While fruit is baking, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt in a large bowl.
  7. Use a pastry blender or food processor to cut in butter until mixture resembles coarse crumbs.
  8. Stir in water until just combined.
  9. Remove blueberries from oven and sprinkle topping over them.
  10. Sprinkle entire cobbler with the cinnamon/sugar mixture (3 tablespoons sugar & 1 teaspoon cinnamon).
  11. Bake 20-30 minutes until topping is golden.
  12. Serve with ice cream.
