Happy Wednesday, Y’all!

I don’t really have a theme for this post, mainly just random thoughts like…

I’ve been craving chocolate this week. Okay, so I crave chocolate EVERY week.

I’ve also been super jealous of all my food blogger friends who went to BlogHer Food and are now posting all their pics. It’s just shameless. No bother, I’ll be there next year.  I’m already registered! Ssshhhhhh! It’s our secret, mmkay? I figure if my husband can go spend a week every year at a race track, I can go to 2 blog conferences a year. ;)

Also, if I have to watch one more episode of Yo Gabba Gabba today, I think my head may explode, and DJ Lance Rock will be in the background saying “That’s AWESOME!” Yeah, it’s one of those days.

I found this ancient recipe in one of my Maw Maw’s OLD OLD cookbooks. The cover was missing and the book was paperback and falling all to pieces, so I can’t credit the source. If you know where it came from, you can yell at me in email later.

Chocolate Chip Oat Bars

Prep Time: 15 minutes

Cook Time: 35 minutes

Total Time: 50 minutes

Yield: 24 bars

Chocolate Chip Oat Bars

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla bean paste
  • 1-1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1 cup oats
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Lightly grease a 9x13-inch pan.
  2. In a mixing bowl, cream together butter and both sugars until fluffly.
  3. Beat in eggs and vanilla bean paste.
  4. Add flour and baking soda until well combined.
  5. Fold in oats and chocolate chips.
  6. Spread into prepared 9x13-inch pan.
  7. Bake for 30-35 minutes or until golden and center is set.
