Lemon & Black Cherry Ice Cream Sandwiches

Whatcha Baking Wednesday | Cajun Sugar Pie

I would like to start this post by saying, IT. IS. HOT.

HOT, like 103 degrees and no one should be allowed out of doors, that kind of  HOT.

With that said, my kitchen also gets HOT when it’s 103 degrees outside.

We like cool treats when it’s this hot, and I made some. I used my refreshing lemon cookie recipe to make the cookies, and then I scooped some oh-so-delicious Purity Black Cherry Chocolate Chunk Ice Cream into the center. Did I mention this is a “Light” ice cream? It says on the box it’s “1/2 the Fat”. I take that as permission to eat twice as much because that would then even out the calories of a normal fat ice cream.

You may notice in some of the last few pictures that my ice cream started to melt which, ahem, made a really big mess, but that just makes it gooey-er.

Lemon & Black Cherry Ice Cream Sandwiches

Yield: 12 ice cream sandwiches

Lemon & Black Cherry Ice Cream Sandwiches

Ingredients

  • 1 box yellow cake mix
  • 1 box lemon instant pudding mix
  • 1 (8 oz) tub frozen whipped topping, thawed
  • 1 egg
  • 1/3 cup powdered sugar
  • Purity Black Cherry Chocolate Chunk or your favorite cherry ice cream

Instructions

  1. Preheat oven to 350°. Line baking sheets with parchment paper.
  2. In a mixing bowl, combine cake mix, pudding mix, whipped topping, and egg until smooth and sticky.
  3. Place powdered sugar in a medium bowl.
  4. Drop dough by rounded spoonfuls (I use a cookie scoop) into powdered sugar and coat completely.
  5. Place cookie dough onto prepared baking sheets and bake for 10-12 minutes.
  6. Cool on wire racks.
  7. Place a baking sheet lined with parchment in the freezer while cookies are cooling.
  8. After cookies are completely cooled, scoop ice cream into center of one cookie and place another cookie on top. Sandwich them together.Repeat with remaining cookies.
  9. Place sandwiches on baking sheet and freeze for 1 hour.
  10. Remove from freezer and enjoy immediately.
