I’m in the midst of packing to move. It’s a temporary move. We’ll still be living in the same place, but it’s gettin’ a MAJOR makeover. We thought it’d be easier to just move everything out, head home to Louisiana for a month, and then come back and move everything back in. WRONG!
Two things we’ve learned so far…moving sucks and renting a storage unit costs A LOT. I really don’t know how people move things to storage and keep them there indefinitely. We are only paying for 2 months for things we HAVE to have, and it’s crazy expensive. Apparently, all the cool kids are doing it though because there are 5 HUGE storage facilities in a 2 mile radius of my home, 5 in 2 MILES. AND…we had to be on a WAITING LIST since May! CRAZY!!!!
Anyway, I digress…you came here for the food. I’m just cranky from all the boxing up and moving.

I’m cleaning out my pantry and freezer before we leave for Baton Rouge in two weeks, and I’ve been baking like a crazy woman. I hope to have all my posts scheduled for the next month because I’m hoping to take a much needed computer vacation while we are in Baton Rouge. In my pantry, I found a large supply of chocolate fudge pudding mixes, and I found 3 packages of pie dough in my freezer. I used these to make a yummy and super easy chocolate pie recipe that I hope you enjoy!

Ingredients
- 1 unbaked refrigerated pie crust
- 1 (8 oz) package cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla bean paste
- 1 package chocolate fudge pudding mix
- 1-3/4 cups milk
- 1 (1 oz) square white chocolate OR 8oz tub frozen whipped topping, thawed
Instructions
- Preheat oven to 400 degrees. Place pie dough in pie plate.
- Bake pie crust for 12 minutes or until edges start to brown.
- Remove pie crust from oven and cool completely.
- In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until combined.
- Add pudding mix and milk and mix for 2 minutes or until thickened.
- Spread pudding mixture into cooled pie crust.
- Grate white chocolate over the top of the pie or cover with whipped topping.
- Refrigerate for at least one hour before serving.
- Be sure to store leftovers in the refrigerator.
