Let’s talk about raisins.

I don’t know why, but raisins are gross. I’ve always hated them. Just the thought of those little mounds of dried up grapes makes me sick. You have to chew them for like 2 minutes just to get them down. GROSS.
It is weird, though. I like grapes but not raisins. NOT raisins.

Anyway, my daughter asked for a ladybug land to watch this summer. She asked me what they like to eat, and I said that I thought they’d enjoy flowers and sugar water like her butterflies did. Imagine my surprise when they arrived and what are we supposed to feed them? RAISINS.
Raisins do not exist in my home. Now, because of the ladybugs, I have to purchase raisins to feed 10 tiny ladybugs a raisin. ONE stinkin’ raisin. GROSS.
The grocery store would not sell me ONE raisin. They MADE me purchase a WHOLE BOX of raisins.

What’s a girl to do? I now have a whole box of raisins, so I made oatmeal raisin cookies.
I ATTEMPTED to eat a raisin in my cookie, and… I can’t believe I’m saying this, but…it wasn’t so bad. I had another bite, and it was pretty good.
So, okay, now maybe raisins aren’t so bad anymore. Who knew?

Ingredients
- 1/2 cup butter, softened
- 2/3 cup light brown sugar, packed
- 1 large egg
- 1/2 teaspoon vanilla bean paste
- 3/4 cup flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1-1/2 cups oats
- 3/4 cup raisins
Instructions
- Preheat oven to 350 degrees. Line baking sheets with parchment paper.
- In a mixing bowl, cream together the butter and brown sugar until fluffy.
- Add egg and vanilla until smooth.
- Mix in flour, baking soda, cinnamon and salt until well combined.
- Stir in the oats and raisins.
- Using a medium cookie scoop, scoop cookies 2-inches apart onto parchment lined baking sheets.
- Bake cookies for 10 to 12 minutes or until edges start to turn golden.
- Remove from the oven and cool on wire racks.
