Beautiful Fall & Apple Cheesecake Bars

A deer even crossed the road less than 10 feet from where we were standing. The girls were so mesmerized they didn’t say A WORD while the deer leisurely walked right by us. Unfortunately, THAT wasn’t captured on camera, but the shots we did get were pretty amazing. We also saw seven turkeys and 2 bucks and, amazingly, no snakes. (Every time I visit Radnor Lake, I see a snake. EVERY SINGLE TIME. It can be the dead of winter, and miraculously, a snake appears just for me.)

When we made it back home from the lake, I decided to add to the fallness (totally a word) and make these oh-so-delicious Apple Cheesecake Bars.

Apples. Cream Cheese. Crumb Topping. Trust me. You need these in your life…like yesterday!

Apple Cheesecake Bars

Prep Time: 15 minutes

Cook Time: 45 minutes

Total Time: 60 minutes

Serving Size: 9 bars

Apple Cheesecake Bars

Ingredients

    For the Crust:
  • 1/2 cup butter, softened
  • 1 cup flour
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/3 cup oats
  • For the Cheesecake Layer:
  • 3/4 cup powdered sugar
  • 8 oz package cream cheese, softened
  • 1 teaspoon vanilla
  • For the Apple Layer:
  • 3 apples (peeled, cored, & chopped)
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • For the Topping:
  • 6 tablespoons butter, softened
  • 1/2 cup flour
  • 1/2 cup oats
  • 1/2 cup brown sugar

Instructions

  1. Preheat oven to 350 degrees.
  2. For the Crust:
  3. In a food processor or the bowl of a stand mixer with paddle attachment, place butter, flour, brown sugar, cinnamon, and oats. Pulse or mix until dough forms.
  4. Press dough into bottom of 9x9-inch square baking pan.
  5. Bake for 10-12 minutes until lightly browned.
  6. Remove from oven and set aside.
  7. For the Cheesecake Layer:
  8. In the bowl of a stand mixer, beat powdered sugar, cream cheese, and vanilla until well combined.
  9. Spread evenly over slightly cooled crust.
  10. For the Apple Layer:
  11. In a large bowl, mix together apples, sugar, cinnamon, and nutmeg until well combined.
  12. Spread apples over cream cheese.
  13. For the Topping:
  14. Combine flour, oats, and brown sugar in a large bowl.
  15. With a pastry knife or fork, cut in butter until coarse crumbs form.
  16. Sprinkle topping over apple layer.
  17. Bake for 25-30 minutes or until top is golden and center is set.
  18. Remove from oven and cool before slicing.
  19. Store in refrigerator.
