Oatmeal Cinnamon Sandwich Bread

A few months ago, I received a brand new breadmaker for Mother’s Day. I loved it and used it every other day or so to make bread. About a week ago, I placed all the ingredients in the breadmaker and started the dough cycle. It worked for about 3 minutes, beeped like it was done, and returned to the startup screen. I restarted it and waited a few minutes to make sure that it wouldn’t turn off again, and then I got busy with other things, loud things like vacuuming that would prevent me from hearing more beeps.

About an hour later, I walked back into the kitchen and noticed the breadmaker was back on the start screen. I was not happy. I dumped the half-mixed dough in the trash because I didn’t know exactly when in the cycle the breadmaker stopped. I started over.

The same thing happened AGAIN to the next batch of dough. The breadmaker would not run more than 3 or 4 minutes before beeping and returning to the start screen.

I started searching the web for troubleshooting help. I made my way to the Sunbeam/Jarden Products website and called customer service.

I nice man answered and was very helpful walking me through what might be wrong. Nothing seemed to work, so guess what he did…

He gave me a BRAND NEW breadmaker!

Three business days after I talked to customer service, there was a NEW BREADMAKER sitting at my door. How awesome is that?! The Sunbeam/Jarden folks could not have been nicer!

So, of course, I got busy eating baking more bread!

*Note: I like to use this Sandwich Bread Pan to make sandwich bread because it has a cover that does not let the bread rise over the top of the pan. :)


Oatmeal Cinnamon Sandwich Bread {Breadmaker}

Oatmeal Cinnamon Sandwich Bread {Breadmaker}

Ingredients

    For Bread:
  • 3 cups unbleached white wheat flour (I use King Arthur)
  • 1 cup oats
  • 2 tablespoons butter
  • 1-1/2 teaspoons salt
  • 3 tablespoons brown sugar
  • 2 teaspoons instant yeast
  • 1-1/4 cups warm (not hot) milk
  • For Filling:
  • 1/4 cup brown sugar
  • 1 tablespoon ground cinnamon

Instructions

    For Bread:
  1. Place flour, oats, butter, salt, 3 tablespoons brown sugar, yeast, and milk in the breadmaker according to directions for your machine. (The breadmaker I use suggests this order: water/milk, butter, dry ingredients.)
  2. Set breadmaker to "Dough" setting.
  3. When done, remove dough and place on floured surface.
  4. Roll out into a rectangle approximately 6x20-inches.
  5. In a medium bowl, combine 1/4 cup brown sugar and cinnamon. Mix well.
  6. Sprinkle cinnamon mixture over dough rectangle.
  7. Starting with the shorter end, roll dough into a log.
  8. Place dough seam-side down in a loaf pan.
  9. Let rise covered for 1 hour.
  10. Bake at 350 degrees for 30-35 minutes.
