Apple Cinnamon Oatmeal Cookies

I hope your morning started out lovely! I know mine did because we had these ah-mazing cookies for breakfast.

Yes, I said cookies.

What? They ARE totally healthy. Let’s run down the list of ingredients:

APPLES.

OATMEAL.

CINNAMON.

SUG…blah, blah, blah, yada, yada, blah, blah.

Cook Time: 15 minutes

Total Time: 30 minutes

Yield: 3-1/2 dozen

Apple Cinnamon Oatmeal Cookies #peanutfree #eggfree

Ingredients

  • 1 cup (2 sticks) butter, room temperature
  • 1 (8 oz) package cream cheese, room temperature
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 teaspoons vanilla
  • 2-1/4 cups flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1-1/4 cup oats
  • 2 small apples (peeled, cored, & chopped into small pieces)

Instructions

  1. Preheat oven to 375 degrees. Line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together butter, cream cheese, and sugars.
  3. Add vanilla. Mix well.
  4. Add flour, cinnamon, baking soda, and salt until well combined.
  5. Mix in oats and apples.
  6. Use medium scoop (approximately 2 tablespoons) to place cookie dough 2-inches apart on baking sheets.
  7. Bake for 12-14 minutes or until golden.
  8. Cool on wire racks.

Notes

These cookies are best the day you bake them. They can be frozen in freezer-safe bags and pulled out the night before for a delicious breakfast treat.
