Chocolate Chip Biscoff Cookies

Today, I made you some cookies. I love Biscoff cookies. This past year, I met Biscoff spread and fell even more in love. Sometimes, I dip my Biscoff cookies (which are awesome by themselves) into some melted chocolate.

One of my goals for the new year was to save time where I can because I have a TON going on this year. So…I came up with a time-saver. Instead of melting chocolate every time I want to dip my Biscoff cookies, I decided to ADD chocolate TO the cookies. I did this using Biscoff spread. The results were delicious!

Yield: 1-1/2 dozen cookies

Chocolate Chip Biscoff Cookies #peanutfree #eggfree

Ingredients

  • 1 cup creamy Biscoff spread
  • 3/4 cup sugar
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon milk
  • 3/4 cup mini chocolate chips processed in nut-free facility (We use Enjoy Life)

Instructions

  1. Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  2. In the bowl of a stand mixer, combine Biscoff spread, sugar, baking soda, baking powder, and salt. Mix well.
  3. Add in milk until combined.
  4. Stir in chocolate chips.
  5. Drop dough by rounded tablespoonfuls onto prepared baking sheets.
  6. Bake in preheated oven for 12 -14 minutes or until lightly browned. Cool on wire racks.
