Apple Butterscotch Mini Loaves

Ingredients
1 1/2 cup sugar
3/4 cup butter, softened
3 eggs
1 tsp. vanilla
2 1/4 cups flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 1/2 tsp. cinnamon
4 medium apples, peeled and chopped
5 oz. butterscotch morsels
Directions
Preheat oven to 350 degrees. Lightly grease 4 mini loaf pans.
In a large bowl, cream butter and sugar. Add eggs and vanilla until well combined. Mix in flour, baking powder, baking soda, salt, and cinnamon. Fold in apples. Pour into mini loaf pans. Sprinkle each loaf with butterscotch chips and press down slightly.
Bake for 45 minutes or until toothpick inserted in center comes out clean. Cool completely before slicing.
