1/2 cup butter
1 cup brown sugar
1 cup flour
1 tsp. baking powder
1 tsp. cinnamon
1-1/2 cups oats
1 cup apple, peeled, cored, and chopped
1/2 cup walnuts, chopped
Preheat oven to 350 degrees. Line baking sheets with parchment paper.
In a large mixing bowl, cream together butter and sugar. Add eggs, one at a time, until well combined. Beat in flour, baking powder, cinnamon, and oats. Fold in apples and walnuts. Drop by rounded tablespoonfuls on prepared baking sheets.
Bake for 15 minutes or until golden. Remove from oven and cool on wire racks.
