Flourless Chocolate Cake

4 oz. bittersweet chocolate

1/2 cup butter

1 tsp. espresso powder

3/4 cup sugar

3 eggs

1/2 cup Dutch cocoa powder


Preheat oven to 350 degrees. Grease 8-inch round cake pan.

Melt chocolate, butter, and espresso powder in double boiler.

Remove from heat and whisk in sugar then eggs until well combined. Fold in cocoa. Pour into pan and bake for 20-25 minutes.
