Pumpkin Muffins

3 eggs

8 oz canned pumpkin

1/3 cup applesauce

1 cup sugar

2 cups flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon salt

3/4 cup semi-sweet or dark chocolate chips


Preheat oven to 400 degrees. Line muffin pan with paper liners and spray each liner with cooking spray.

In a large mixing bowl, combine eggs, pumpkin, applesauce, and sugar. Mix well. Add in flour, baking powder, baking soda, cinnamon, and salt until well combined. Fold in chocolate chips. Pour batter into 12 muffin cups.

Bake in pre-heated oven for 20-25 minutes or until cake tester inserted in center comes out clean. Cool on wire racks before serving.
