Strawberry Fluff Cakes

1 box cake mix, plus ingredients on box
1 jar Strawberry Marshmallow Fluff
1 (8 oz) bar cream cheese
1/2 cup butter, softened
4 cups powdered sugar
1 tablespoon Wilton Meringue Powder
1 teaspoon vanilla or almond extract
2 tablespoons water
Preheat oven to 350 degrees. Line muffin tins with paper liners.
Prepare and bake cupcakes according to package directions. Cool on wire racks.
With a sharp knife, scoop out center of cupcakes. Fill each cupcake with Strawberry Fluff.
In a large mixing bowl, beat cream cheese and butter until smooth and fluffy. Add powdered sugar and Meringue Powder until well combined. Add vanilla. Add water to desired consistency. Spread icing over cupcakes. Top with a strawberry.
